Fantastic “Friday” Five: Citrusy black beans, Cookies 2-ways and Garden planning

Happy Sunday everyone! Yeah, that’s right – I’m still doing a “Fantastic” post even though it’s not Friday. It’s my blog and I can cheat if I want to. Here’s what I’ve especially enjoyed this week:

#1: Black beans and salad with balsamic vinaigrette

I love love LOVE making black beans from “scratch”, and Elise’s recipe from Simply Recipes is my absolute favorite way to prepare them. I served them with warmed corn tortillas, corn bread, and a fresh salad made with local lettuce and tomatoes. We’ve been using a fabulous balsamic vinaigrette from Chinese Grandma. Sweet potato and black bean nachos (vegan/gf)

First of all, I am aware I’ve been kind of absent in the blogosphere lately… life happens. I hope you welcome me back with open arms. :) Now let’s get to some good eats!

Sometimes I just need (well, I guess it’s a very strong want…) some nachos. And is there any more perfect south-of-the-border flavor combination than black beans and sweet potatoes? Didn’t think so. (The sound of peepers – my neck of the woods’ version of crickets – was the only response I got, so I I’ll take that as a no.) These cravings came together with the bag of delicious quinoa and black bean tortilla chips in my cupboard tonight for a fabulous meal. Dig in!

Kale pesto and sweet potato pasta (and my thoughts on canned chickpeas)

I love kale. And lucky for me, it’s a vegetable that enjoys Maine’s soil and seasons. Unfortunately, it seems that many of my fellow farmers’ market go-ers also love kale and other greens, because there’s been an absolute dearth in recent weeks – even months. So I’ve broken down (many times…) and bought kale from the grocery store, but at least it’s organic (important because kale is on the infamous dirty dozen list), it’s from a Massachusetts company (Olivia’s Organics), and it’s grown in the US. Citrus-Chili Bean Stew (vegan/gf)

I love beans.

I feel withdrawal if I haven’t had beans in a week, and those pangs lately led me to re-discover a jar of gorgeous dried Jacob’s cattle beans (local, from Maine) that I bought at Whole Foods a little while ago (I don’t often go to WF, but when I do it’s to stock up on great bulk items!). I decided to make a chili-like stew with them and some equally lovely dried chickpeas that were calling to me from the pantry. Continue reading
